Vegetable Rice Bath


2 cups thickly grated ridge gourd or vegetable of your choice
2 cups cooked rice
5 tsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp asafoetida
1 tbsp chopped green chillies
2 tsp ginger-garlic paste
1 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp sugar
salt to taste
1/4 cup yoghurt/ curds

For The Garnish
2 tbsp grated coconut
1 tbsp chopped coriander (dhania)

Heat oil in a wok. Add mustard seeds. Once they begin to splutter add in the cumin seeds along with asafoetida, ginger-garlic paste and green chilies. Saute for about a minute. Add your choice of vegetable and cook till done. Add cooked rice 21/2 cups. Add coriander powder, cumin powder, sugar and salt. Add the curds. Mix well. Keep it on a medium flame for 6-8 minutes. Add chopped coriander leaves and grated coconut. Mix well. Serve Hot.
